Hundred year old olive trees with their own unique characteristics scatter the Valdinievole, particularly on the Montalbano side.  Unlike in the rest of Italy, the rigid climate in our area fortifies the olive-trees and gives rise to a Tuscan Montalbano IGP olive oil with a fruity and pungent flavour. Its superior quality, rich with organoleptic nuances, is obtained from cultivars such as moraiolo, frantoio, leccio, pendolo. Its unique taste can be particularly appreciated during the period of the new oil production, during the first olive harvest in Autumn: a strong, genuine oil, with a spicy aftertaste, ideal for the most sophisticated of palates.
The fame of excellent Montalbano wines dates back to the end of the 13th century, when the bishops of Pistoia asked them to their own table as a tribute. They have been appreciated by writers, scholars and intellectuals like Francesco Redi and even by the teetotaller Edmondo de Amicis.
The grapes grown in the vineyard are typical of the Chianti area: prevalently Sangiovese, Canaiolo, Malvasia bianca and Trebbiano. The production consists of  Chianti Montalbano DOCG that has a ruby-red colour, that tends toward dark garnet with aging, and Bianco di Valdinievole DOC that is obtained, at least 70% at any rate, from the Tuscan Trebbiano vine, followed by Chianti Malvasia, Canaiolo bianco and Vermentino. Vinsanto della Valdinievole is produced with grapes that undergo a natural withering and are aged in special “caratelli” (traditional small barrels) for a minimum of three years. It is a dessert wine that is ideal with dry pastry like” brigidini” (traditional thin wafers) or rustic sweets like "castagnaccio” (chestnut flour cake), both typical of our land.
