The Sorana Beans
The notoriety of the Sorana Bean has long been documented. Gioacchino Rossini, who appreciated its delicate characteristics, in a letter to his friend, the musician Giovanni Pacini, expressly requested them as compensation for the revision of some scores. It is a small, thin-skinned bean belonging to the “cannellino” variety. When it is properly cooked, the skin becomes imperceptible and completely blends with the pulp. Particularly tasty, it is cultivated on the dry river bed of the Pescia torrent (ghiareti), then hand-picked, exposed to the sun for 3 to 4 days and finally stored in special containers with the addition of pepper grains and valerian roots or laurel leaves. Thanks to its distinctive organoleptic characteristics and unmistakable flavor, it has been designated as an IGP (Protected Geographic Indication) food and officially recognized as a Slowfood Presidium. It is produced in very limited quantities and is most easily found in local restaurants. Try them baked “al fiasco" (crock baked), following traditional recipes: they are unforgettable!
